I seem to get the urge to bake at strange moments. Like last night at 11pm, for instance. I was sitting in the living room, and suddenly had the thought, "I need to make scones right now." It wasn't even a vague inclination to simply bake anything. It had to be scones. So scones it was.
Dried apples were on hand, so I used them in the scones. The tart apples paired well with the subtle sweetness of the scones, and the cinnamon sugar topping. I also substituted fat free plain yogurt for the standard sour cream found in most scone recipes. The outcome was a fluffy, moist bunch of scones perfect for breakfast or teatime.
Apple Country Scones (from The Taste of Home Cookbook)
3/4 cup dried apples, chopped
2 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cold butter
1 cup fat free plain yogurt
2 egg yolks
Topping:
1 egg white
1 teaspoon sugar
1/8 teaspoon ground cinnamon
Place apple pieces in a bowl. Cover with hot water and let stand for 5 minutes. Drain well and set aside. In a large bowl, combine flour, sugar, baking powder, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. Combine sour cream and egg yolks; add to crumb mixture. Stir in apricots just until blended. Turn onto a floured surface; knead gently 8-10 times. Divide into two portions. On ungreased baking sheets, pat dough into 8-inch circles. Cut each into 4 wedges, but do not separate. Beat egg white; brush over dough. Combine sugar and cinnamon; sprinkle over tops. Bake at 425 degrees for 15-18 minutes or until golden. Serve warm. Yields 8 scones.

Is this because of the baby or has this type of urge existed before there was a half-ling growing in you? Just thought instead of weird food cravings you are a weirdo and get baking cravings.

ReplyDeleteLooks good. It'll fit in well with my goal to bake with healthier ingredients. What do you think of using 1 cup of whole wheat flour and 1 of all-purpose instead of 2 of all-purpose. Would that work?
