My go-to autumn cookies are these Chewy Ginger Molasses Cookies. They embody the fall season with a blend of spicy ginger, cinnamon, cloves, and rich molasses. They are so simple to make - all you need is a mixing bowl and spoon - and are guaranteed to make your home smell amazing.
I almost hesitated to share the recipe, since I make it all the time for holiday parties. But they say this is the season of giving, so here you are!
Chewy Ginger Molasses Cookies
3/4 cup canola oil
1 cup sugar
1/4 cup molasses
1 egg
2 cups flour
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
In a large bowl, mix oil, sugar, molasses and egg. Add remaining ingredients to mixture. Form into walnut-sized balls and roll in sugar. Place dough balls on a baking sheet with about 2 inches space between. Bake at 350 degrees for 8 minutes. Transfer to a wire rack to cool. Makes about 24 cookies.
