Individual Baked Egg


Do you like eggs? I hope you do. If you don't, I'm not sure we can be friends.

If you do like eggs, then here's a treat for your next breakfast (or anytime-of-the-day egg craving, for that matter).

Individual baked eggs. Minimalist, yet elegant. Make a single serving for just yourself, or more to feed a group. I used low-fat pork sausage, but really anything can be used. Some yummy variations: bacon, ham, mushrooms, onions, tomatoes, or spinach.

Individual Baked Egg

2 ounces sausage
1 egg
Salt & pepper to taste

Preheat oven to 350 degrees. Grease ramekin or other small oven-safe dish. Cook sausage over medium high heat in a skillet until evenly brown. Crumble sausage, and place in the ramekin. Crack egg into ramekin over the sausage. Sprinkle with salt & pepper. Place ramekin into a shallow baking dish, and bake in preheated oven for about 15-20 minutes until center of egg is completely white and set. Serve immediately.
