We're still finding creative uses for watermelon, even after several pitchers of agua fresca last week. When I read about making homemade chewy fruit snacks on Simple Bites, I figured that might be a good vehicle for watermelon.
My kids adore chewy fruit snacks, so I was excited to make a healthier homemade version. The recipe uses just a few ingredients, and is easy to make. The end product is a bit more firm than jello, minimally sweet, and an easy-clean-up (very important) treat that the kids gobbled up.
Any fruit (or even fruit juice) will do, so feel free to experiment with strawberries, peaches, or whatever other fruit you have. Just make sure to keep them stored in the fridge - I left some out on the kitchen counter, and they turned to mush! If you want to transport them, I suggest packing them in a cooler or insulated bag.
Watermelon Chewy Fruit Snacks (from Simple Bites)
1 1/2 cups watermelon (or any other fruit)
2 tablespoons honey (optional, depending on the sweetness of the fruit)
1 teaspoon vanilla (optional)
2 1/2 tablespoons gelatin (3 packets)
In a saucepan over medium heat, heat fruit, honey, and vanilla until fruit has softened and started to release juices. Turn off heat, pour mixture into a blender and puree (or use an immersion blender), then return to saucepan.
Pour in gelatin slowly, whisking to incorporate. Continue to whisk until the gelatin is completely dissolved and incorporated into the fruit.
Pour mixture into a glass, Pyrex, or silicon pan, and put in the refrigerator to cool for at least an hour to set. Once set, cut into individual pieces and store in an airtight container in the refrigerator.
