I Got Soul


Yesterday I went to
M&M Soul Food for breakfast with some friends. Mmm boy...nothing like a greasy hamburger steak, potatoes, eggs, biscuits and grits to start your day off right is what I say. If you haven't been to M&M before, do yourself a favor and go right this instant. They have all the soul food standards, including gumbo, catfish, mac & cheese, short ribs and fantastic corn bread.

I was inspired to make collard greens for the first time. I like this recipe because it's so simple, and the end result is greens with a salty, bitter flavor that perfectly compliments the meat and starch dishes that it's served with. Get some soul in you and enjoy!


Southern Collard Greens
1 1/2 quarts water
1 1/2 pounds ham hocks
4 pounds collard greens, rinsed and trimmed
1/2 teaspoon crushed red pepper (optional)
1/4 cup vegetable oil
salt & pepper to taste

Place the water and the ham hocks in a large pot with a tight-fitting lid. Bring to a boil. Lower the heat to very low and simmer covered for 30 minutes. Add the collards and the hot pepper flakes to the pot. Simmer covered for about 2 hours, stirring occasionally. Add the vegetable oil and simmer covered for 30 minutes. Serves 6.
